Whiskey · Double Rocks
Penicillin
A smokey peated mist floating above a golden ginger rock.

Ingredients
- 50ml Blended Scotch Whisky
- 20ml Fresh Lemon Juice
- 20ml Honey-Ginger Syrup
- 10ml Peated Islay Single Malt (float)
Method
- Shake blended Scotch, lemon juice, and honey-ginger syrup with ice.
- Strain into a rocks glass over a tempered Horizon Gem Cylinder.
- Slowly float the peated Islay Scotch over the top.
- Garnish with candied ginger.
The Aurasphere serve
The float of peated Islay Scotch sits on the flat top surface of the Horizon Gem Cylinder. This preserves the aromatic peat nose at the top of the drink, while the lower body remains cold and balanced with honey and ginger.
