Whiskey Sour
A snow-white foam collar resting on a crystal-clear sphere.

Ingredients
- 50ml Bourbon Whiskey
- 25ml Fresh Lemon Juice
- 15ml Rich Simple Syrup (2:1)
- 15ml Egg White (or Aquafaba)
Method
- Dry shake all ingredients without ice to emulsify.
- Wet shake vigorously with block ice to chill.
- Double strain into a rocks glass over a tempered 60mm Signature Sphere.
- Garnish with three drops of Angostura bitters dropped onto the foam head.
The Aurasphere serve
Egg white foam needs stability. The 60mm Signature Sphere sits proud in the glass, supporting the foam blanket on its shoulders rather than collapsing it like erratic cube piles. The sphere keeps the liquid underneath ice-cold without diluting the velvety texture.
