Liqueur & Cognac · Double Rocks
Amaretto Sour
An almond-scented sour crowned with foam over clear ice.

Ingredients
- 45ml Amaretto Liqueur
- 15ml Cask-Strength Bourbon
- 30ml Fresh Lemon Juice
- 15ml Egg White (or Aquafaba)
Method
- Dry shake all ingredients to create foam, then wet shake with ice to chill.
- Double strain into a rocks glass over a tempered 60mm Signature Sphere.
- Garnish with a skewered brandied cherry.
The Aurasphere serve
Sweet liqueurs and citrus can easily feel cloying if they warm up. The massive thermal mass of the 60mm Signature Sphere suppresses the sweet nodes of the amaretto, bringing forward the sour citrus and oaky bourbon notes.
