Gin · Highball
Tom Collins
A towering column of clear ice anchoring a refreshing fizzy classic.

Ingredients
- 50ml Old Tom or London Dry Gin
- 25ml Fresh Lemon Juice
- 15ml Simple Syrup
- Top with Soda Water
Method
- Combine gin, lemon, and syrup in a highball glass over a tempered Horizon Gem Cylinder.
- Stir gently, top with soda water, and stir once more.
- Garnish with a lemon wheel and brandied cherry.

Highball serves need vertical chilling. The Horizon Cylinder stands tall in the glass, ensuring a uniform temperature from the top of the straw to the bottom, while its lack of edges keeps the soda water sparkling for longer.
